The hop that made hops famous — Cascade single-handedly defined the American pale ale style and helped ignite the craft beer landscape. Commercialized by the USDA-ARS in 1972 as a cross between an English Fuggle and a male derived from the Russian variety Serebrianka, Cascade bursts with zesty grapefruit flavor and aroma (thanks to high myrcene), rounded out by soft floral and spice. Although it lends balanced bittering, Cascade can also be used in late hop additions to maximize its bright flavor and aroma. The notorious king of pale ale hops.
