Description
Rooibos — the smooth, caffeine-free base Rooibos is the foundation of the chai. Its naturally mellow, slightly sweet, woody flavor gives the tea enough body to carry all of those strong spices without requiring black tea.
It works especially well with cinnamon, ginger, orange, vanilla-like baking spices, and roasted flavors. Because it is naturally caffeine-free, it also makes this chai suitable as a cozy evening drink.
Cinnamon Chips — the main pumpkin-spice note Cinnamon should be one of the first spices people notice. Its sweet, woody warmth immediately brings pumpkin pie, baked goods, and autumn desserts to mind.
It also softens some of the sharper flavors of ginger, cloves, and chicory. Of all your spices, cinnamon can comfortably have the biggest presence.
Ginger Root — warming chai character Ginger is what keeps this from becoming simply a “pumpkin pie tea.” It gives the blend the lively, warming bite associated with chai.
It cuts through the sweetness of apple and rooibos and balances the heavier cinnamon, clove, nutmeg, and chicory notes. Ginger is also traditionally used to support digestion and settle occasional digestive discomfort.
Dried Apple — natural fruity sweetness Apple might sound unusual in a pumpkin chai, but it's doing something important. It adds a gentle fruity sweetness and creates a baked-dessert quality without adding sugar.
Think baked apple, pumpkin bread and autumn pie filling rather than fresh apple juice.
Apple is also an excellent companion to cinnamon, ginger, cardamom, cloves, nutmeg, and orange.
Orange Peel — brightness and lift With this many warm, dark ingredients, the blend needs something bright. That's orange peel's job.
Its citrus aroma lifts the rooibos and spices and prevents the finished cup from becoming muddy or overly earthy. Orange is particularly beautiful with cinnamon, cloves, ginger, and cardamom.
You don't necessarily want someone thinking, “orange tea.” Ideally, they'll simply notice that the chai smells lively and aromatic.
Cardamom — the true chai personality Cardamom is one of the ingredients that tells the palate, “This is chai.”
It provides a wonderfully complex combination of sweet, citrusy, floral, and spicy notes. It also connects the bright orange peel with the deeper cinnamon, ginger, and clove flavors.
Cardamom can get expensive and powerful, so you don't need enormous quantities for it to make a difference.
Chicory Root — roasted depth and body I really like chicory in this particular combination.
Roasted chicory contributes dark, earthy, slightly bitter, coffee-like notes. That gives a caffeine-free rooibos chai considerably more depth and makes the cup feel richer.
It also creates a nice contrast:
sweet apple + rooibos → warming spices → dark roasted chicory
That extra depth should make this especially satisfying with milk or oat milk.
Cloves — deep, concentrated spice Cloves bring the intense, warming spice note associated with mulled drinks, chai, pumpkin pie, and holiday baking.
They're incredibly potent, though. You want cloves in the background supporting cinnamon and cardamom—not shouting over them.
This is another ingredient I'd start low and increase only after tasting.
Nutmeg — the “pumpkin pie” finishing touch Nutmeg is incredibly important to the Pumpkin Patch identity.
Pumpkin itself has a relatively mild flavor. What most people recognize as “pumpkin spice” is largely the familiar combination of spices surrounding it. Nutmeg, cinnamon, ginger, and cloves immediately evoke pumpkin pie.
Nutmeg contributes a warm, sweet, woody, slightly nutty aroma. You only need a little.
🎃 Why they all work together
This one has several distinct flavor layers.
Rooibos + chicory create the deep, full-bodied foundation.
Apple + orange peel provide natural fruitiness and brightness so the base doesn't become too dark or bitter.
Then comes your chai core:
Cinnamon + ginger + cardamom + cloves.
And finally nutmeg pushes that chai profile toward pumpkin pie and autumn baking.
Put together, the flavor experience should be something like:
🎃 sweet autumn spice → 🍎 baked fruit → 🍊 little flash of citrus → 🫚 warming ginger & cardamom → ☕ roasted chicory → 🍂 lingering cinnamon, clove & nutmeg
